What each ingredient does

Cucumbers
Provide the main crunchy body of the salad, which softens slightly during salting and pickling.
White onions
Add sharpness and sweetness that mellow during the long pickling period.
Green peppers
Contribute fresh, grassy flavor and a bit of crisp texture to the mixture.
Coarse sea salt
Draws water out of the vegetables, firming them and concentrating their flavor.
Clear cold vinegar
Acidifies the mixture, preserving it and giving the salad its tangy flavor.

The step that matters

Draining the mixture for 24 hours. Salting and draining pull excess water out of the vegetables. If too much liquid remains, the vinegar dilutes and the salad becomes watery and less crisp.

Swap the onion
