Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Form the main body of the ketchup and provide its pulp, flavour and colour.
Vinegar
Adds acidity that gives the ketchup its tang and helps preserve it.
Garlic
Contributes pungent aroma and savoury depth to the sauce.
Coarse sea salt
Seasons the sauce and draws out flavour from the tomatoes.

The step that matters

Boiling down the mixture. Boiling for the full time until reduced by half concentrates the sugars and flavours and thickens the sauce. Stopping early leaves it thin and watery, so reduction should be judged by volume as well as the stated time.

Swap the tomato
