What each ingredient does

Tapioca
Its starch swells and softens in the hot milk, thickening the pudding into a set body.
Milk
Forms the liquid base that the tapioca swells in and the custard sets from.
Egg yolks
Thicken the custard and add richness to the pudding.
Sugar
Sweetens the pudding and the stiff egg white topping.
Egg whites
Whipped until stiff, they form an airy meringue topping that browns under the broiler.
Prepared coconut
Adds flavor and a toasted note to the topping.

The step that matters

Cooking the tapioca fully. Tapioca thickens the milk only as its starch swells and softens during simmering. Stopping early leaves a chalky texture and a thin pudding. Soaking overnight shortens the cooking and helps the grains soften evenly.
