To Make a Goose Pie

Ingredients

Directions

  1. Split the goose down the back and remove the large bones. Season with pepper and salt.

  2. Split the fowl the same way and remove the large bones. Season with pepper, salt, and mace.

  3. Place the boiled tongue inside the fowl, then put the fowl inside the goose and sew it up.

  4. For the paste, boil the flour, butter, and suet together to make a dough.

  5. Shape the dough into an oval pie, place the goose inside, and fill the corners with birds, veal, or pork.

  6. Add a pound of butter inside the pie before sealing it.
