To Make Flummery, or Blomange

Ingredients

Directions

Prepare the jelly

  1. Boil the calf's feet until you have a strong jelly, reducing it to 1 quart.

  2. Strain the jelly through a colander.

  3. Let the strained jelly sit overnight to remove fat.

Make the almond milk

  1. Blanch the almonds.

  2. Pound the blanched almonds with butter and rose water.

  3. Boil the almond mixture in ½ cup of new milk.

  4. Strain the boiled almond mixture well.

Combine and set

  1. Combine half of the jelly stock with the almond milk in a saucepan.

  2. Sweeten the mixture to taste.

  3. Heat the mixture until hot.

  4. Remove the mixture from heat.

  5. Stir the mixture until nearly cold.

  6. Mix in enough thick cream to make it white.

  7. Wet your molds.

  8. Pour the mixture into the molds.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's feet
Their collagen makes a strong jelly that sets the flummery.
Sweet almonds
Pounded into the milk, they give the flummery its flavour and pale body.
Thick cream
Adds richness and a white, creamy colour to the set mixture.
Butter
Adds fat and richness to the pounded almond mixture.

The step that matters

Stir the mixture until nearly cold. Stirring while the mixture cools keeps it smooth and evenly textured, so it does not separate or form a skin before it is poured into the molds and begins to set.
