What each ingredient does

Cream
Forms the thick, rich body of the clotted cream as it sets.
Rennet
Causes the cream to curdle and set into a soft, solid mass.
Fruit juice
Adds colour, sweetness and a fruity flavour to the finished cream.
Sugar
Sweetens the cream to taste and balances the fruit's acidity.

The step that matters

Breaking the curd. Breaking the set curd too roughly or too early releases liquid and leaves a grainy, watery texture. Breaking it gently with a silver spoon keeps the curds intact so the cream stays smooth and thick.

Swap the strawberry

How well each one fits the dish's main ingredients (cream, sugar):

  1. Vanillafits better
  2. Strawberrythe original
  3. Raspberryfits about as well
  4. Raisinfits less well

Fit is the average pairing score against cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
