Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable jelly as it cools.
Sugar
Adds sweetness and balances the sharpness of the tomato and vinegar.
Vinegar
Adds acidity that gives the tomato flavour a sharp, bright edge.
Tomatoes
Provide the main liquid and the tomato flavour of the jelly.

The step that matters

Soak the gelatine before adding it. Gelatine needs to hydrate in liquid before heating so it dissolves evenly; added dry or in clumps, it can leave lumps or fail to set smoothly.

Swap the tomato

How well each one fits the dish's main ingredients (sugar, vinegar, pepper):

  1. Capsicumfits better
  2. Mustardfits better
  3. Cabbagefits better
  4. Tomatothe original

Fit is the average pairing score against sugar, vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
