Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown sugar
Provides the sugar that yeast ferments, producing carbonation and flavour.
Cream of tartar
Adds acidity that gives a tart taste and helps keep the brew stable.
Ginger root
Supplies the characteristic spicy aroma and flavour of the drink.
Yeast
Ferments the sugar into carbon dioxide, making the drink fizzy.

The step that matters

Bottling after fermentation. Yeast keeps fermenting sugar into carbon dioxide after bottling. If the ginger beer is still active when sealed, pressure can build and bottles may burst, so the fermentation needs to be well advanced before bottling.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (sugar, cream, ginger, egg):

  1. Vanillafits about as well
  2. Lemonthe original
  3. Coconutfits about as well
  4. Raisinfits about as well

Fit is the average pairing score against sugar, cream, ginger, egg. Candidates are from the same food group and used in at least 100 recipes.
