Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown sugar
Provides the sugar that yeast ferments into alcohol and carbonation.
Yeast
Ferments the sugars, producing alcohol and carbon dioxide that give the beer its fizz.
Hops
Adds bitterness and aroma that balance the sweetness of the sugar.
Chip sassafras
Contributes its characteristic root flavour to the brew.
Essence of spruce
Gives the beer its distinctive resinous spruce flavour.

The step that matters

Add yeast and let it stand for 24 hours. The mixture must be cooled before yeast is added, since hot liquid can kill yeast and stop fermentation. Once the yeast is in, the sugars convert to alcohol and carbon dioxide.

Swap the ginger

How well each one fits the dish's main ingredients (hops, sugar):

  1. Cinnamonfits about as well
  2. Gingerthe original
  3. Nutmegfits less well
  4. Clovefits less well

Fit is the average pairing score against hops, sugar. Candidates are from the same food group and used in at least 100 recipes.
