Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Soak a dozen macaroons in sherry wine for 10 minutes, then remove them.

  2. Beat the eggs lightly, then add sugar, salt, milk, cream, chopped almonds, almond extract, and 4 finely powdered macaroons.

Assemble and bake

  1. Pour the mixture into a pudding dish and arrange the soaked macaroons on top.

  2. Cover and bake for about 30 minutes at 350°F (175°C).

What each ingredient does

Macaroons
Provide the base flavor and, when powdered, help thicken the pudding; soaked ones soften and add moisture.
Sherry wine
Softens the soaked macaroons and adds a fragrant, slightly sharp flavor.
Eggs
Set as they bake, giving the pudding its custard structure.
Milk
Adds moisture and keeps the custard tender rather than dry.
Cream
Adds richness and a smooth, soft texture to the custard.
Sugar
Adds sweetness and balances the eggs and sherry.

The step that matters

Soaking the macaroons. Soak them only for the stated time so they soften and absorb sherry without falling apart. Over-soaked macaroons turn mushy and lose their shape on top of the custard.

Swap the almond

How well each one fits the dish's main ingredients (sherry, wine, egg, sugar, milk, cream):

  1. Almondthe original
  2. Cocoafits about as well
  3. Chestnutfits about as well
  4. Peasfits less well

Fit is the average pairing score against sherry, wine, egg, sugar, milk, cream. Candidates are from the same food group and used in at least 100 recipes.
