Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Combine veal, beef, and cold water in a large pot.

  2. Add peppercorns, onion, celery, bay leaf, and salt.

  3. Bring to a boil, then reduce heat and simmer for 4-6 hours, skimming off any foam that rises to the surface.

  4. Strain the stock through a fine sieve and discard solids.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Knuckle of veal
Releases gelatin and collagen as it simmers, giving the stock body and a rich mouthfeel.
Lean beef
Adds deeper beefy flavor to the stock alongside the veal.
Cold water
Starts the extraction gently, letting flavor and gelatin dissolve as the water heats.

The step that matters

Skimming the foam. Foam rising during the simmer carries impurities that can make the stock cloudy and bitter. Skimming it off keeps the finished stock clear and clean-tasting.
