What each ingredient does

Pearl barley
Releases starch and grain flavor into the water, giving the drink body and a mild, toasty taste.

The step that matters

Drain and rinse the barley after the first boil. The first boil pulls out surface starch, dust and bitter compounds. Draining and rinsing removes them, so the final barley water stays cleaner-tasting and less cloudy.
