Why it works: Parsley and carrot match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 8,053 recipes. Both carry 2,4-decadienal, which smells seaweed. The science ↓

What each ingredient does
- Shin beef
- Lean meat and bone release gelatin and flavour into the long-simmered stock.
- Beef bone marrow
- Marrow from the bone adds richness and browned, savoury flavour to the meat.
- Onion
- Adds aromatic sweetness and depth of flavour as it cooks in the stock.
- Carrot
- Contributes subtle sweetness and body to the stock's overall flavour.
- Celery
- Adds aromatic, savoury background flavour to the stock.
The step that matters
Remove the scum as it rises. Scum is coagulated proteins and impurities that cook into the liquid if left, making the stock cloudy and giving it off flavours. Skimming while it heats keeps the stock clear and clean-tasting.

Fit is the average pairing score against beef, parsley, potato, turnip, onion, carrot, celery. Candidates are from the same food group and used in at least 100 recipes.
