Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mixture

  1. Chop the beef and ham very fine.

  2. Add salt, pepper, cracker crumbs, beaten eggs, and cream. Mix thoroughly.

Layer and bake

  1. Grease a bread pan and press half the mixture into it firmly.

  2. Trim each end of the hard-boiled eggs to make them flat, and place them in a row, end to end.

  3. Pack the remaining meat mixture on top of the eggs, pressing down well.

  4. Cover and bake in a 350°F (175°C) oven for over one hour.

  5. Uncover and bake for an additional 30 minutes.

  6. Serve hot or cold.

What each ingredient does

Beef
Provides the main meaty body and firm structure of the loaf.
Ham
Adds savoury flavour and moisture to the meat mixture.
Eggs
Bind the meat together and help it set firmly as it bakes.
Soda crackers
Absorb moisture and help hold the loaf together while it cooks.
Cream
Adds moisture and tenderness to the mixture.

The step that matters

Pressing the meat mixture firmly into the pan. Packing the layers well removes air pockets and helps the loaf hold its shape when sliced. Loose packing can leave gaps and a crumbly texture after baking.
