Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix the grated cheese, flour, salt, cayenne pepper, and butter until well combined.

  3. Add enough cold water to form a dough that can be rolled out thin.

  4. Roll out the dough and cut it into strips that are 7 inches long and ½ inch wide.

  5. Place the strips on a baking sheet and bake for 10 minutes.
