Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a stiff foam that gives the punch its light, airy texture.
Sugar
Dissolved into syrup that sweetens the punch and stabilizes the whipped egg whites.
Pineapple ice
Chills the punch and adds fruity flavor and dilution as it melts.
Champagne
Adds bubbles and lightness when gently whipped in at the end.
Jamaica rum
Contributes alcohol strength and rich, aromatic flavor.

The step that matters

Add the hot syrup slowly while beating the egg whites. Pouring hot syrup in gradually while whisking cooks the whites gently and builds a stable, glossy foam. Adding it all at once or too cold can leave the foam loose or grainy.

Swap the vanilla

How well each one fits the dish's main ingredients (pineapple, rum, sugar, egg, champagne):

  1. Vanillathe original
  2. Strawberryfits about as well
  3. Bananafits less well
  4. Mangofits less well

Fit is the average pairing score against pineapple, rum, sugar, egg, champagne. Candidates are from the same food group and used in at least 100 recipes.
