Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the custard

  1. Take the crumbs from the center of a stale loaf and add the chopped chicken.

  2. Beat the egg yolks until well mixed, then add the salt, celery salt, and milk.

  3. Pour the egg mixture over the bread crumbs and chicken, mixing thoroughly.

Bake and serve

  1. Fill a custard cup with the mixture and place it in a pan of hot water.

  2. Bake in a moderate oven at 350°F (175°C) until set.

  3. Serve hot.

What each ingredient does

Egg yolks
Set the custard as they cook, binding the mixture and giving it a smooth, firm texture.
Bread crumbs
Provide the body of the custard, soaking up the egg and milk to hold the dish together.
Milk
Adds moisture and softness, diluting the eggs so the custard stays tender rather than rubbery.
Chicken breast
Supplies the main savory flavor and protein, setting into the custard as it bakes.

The step that matters

Bake in a water bath until just set. Baking in hot water moderates the heat so the egg proteins set gently. Overbaking or direct heat can curdle the custard and make it grainy or watery.

Swap the celery

How well each one fits the dish's main ingredients (bread, egg, milk, chicken):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Garlicfits about as well

Fit is the average pairing score against bread, egg, milk, chicken. Candidates are from the same food group and used in at least 100 recipes.
