Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Provide the bulk and starch that hold the croquette shape and give a soft interior.
Butter
Adds fat for richness and a tender, moist texture inside.
Egg
Binds the mixture, and the white forms a coating that helps crumbs adhere and brown.
Bread crumbs
Form a crisp, browned outer crust when fried.

The step that matters

Fry in smoking hot lard. The fat must be very hot so the crumb coating crisps and browns quickly, sealing the outside before the soft interior absorbs grease or falls apart. Cooler fat makes greasy, loose croquettes.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (potato, butter, white pepper, celery, egg, bread):

  1. Asparagusfits better

  3. Leekfits better
  4. Onionthe original

Fit is the average pairing score against potato, butter, white pepper, celery, egg, bread. Candidates are from the same food group and used in at least 100 recipes.
