What each ingredient does

Green tomatoes
Provide the bulk of the pickle and absorb the brine and sweet-sour flavours.
Salt
Draws moisture out of the sliced vegetables overnight, firming them and seasoning the mixture.
Vinegar
Provides the acidity that preserves the pickle and gives it its sharp flavour.
Brown sugar
Balances the sharp vinegar with sweetness and adds depth to the syrup.
Onions
Add sweetness and savoury body that softens during cooking.

The step that matters

Draining after the overnight salt. The salted mixture must be drained well before cooking so excess salt and liquid are removed; otherwise the pickle can be too salty and watery, and the brine is diluted.

Swap the onion
