What each ingredient does

Egg yolks
Emulsifiers that bind the oil and acid into a stable, thick sauce.
Olive oil
Supplies the fat that forms the rich, creamy body of the sauce.
Mustard
Helps hold the oil and water-based ingredients together as an emulsion.
Lemon juice
Adds acidity that brightens flavour and helps thin the sauce as it thickens.

The step that matters

Adding the oil slowly at the start. Oil must be dispersed into tiny droplets around the egg yolk emulsifiers. Adding it drop by drop while stirring constantly lets the emulsion form. Pouring too fast causes the mixture to break and separate into oily liquid.

Swap the mustard

How well each one fits the dish's main ingredients (sugar, pepper, egg, lemon, vinegar, olive):

  1. Capsicumfits better
  2. Mustardthe original
  3. Cucumberfits about as well
  4. Spinachfits about as well

Fit is the average pairing score against sugar, pepper, egg, lemon, vinegar, olive. Candidates are from the same food group and used in at least 100 recipes.
