Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White sugar
Provides sweetness and, as it dissolves and cooks down, the body that sets the fudge.
Milk
Supplies liquid and milk solids that give the fudge a soft, creamy texture.
Unsweetened chocolate
Supplies the chocolate flavour and fat that firm up as the fudge cools.
Butter
Adds fat for a smoother, richer mouthfeel and helps prevent a grainy texture.

The step that matters

Boil until it sets in cold water. Sugar concentration decides whether fudge sets properly. Boiling too little leaves it soft and runny; boiling too long makes it hard and crumbly. The cold-water test checks the sugar stage.

Swap the walnut

How well each one fits the dish's main ingredients (sugar, milk, chocolate, butter):

  1. Almondfits better
  2. Cocoafits better
  3. Pecansfits better

Fit is the average pairing score against sugar, milk, chocolate, butter. Candidates are from the same food group and used in at least 100 recipes.
