Why it works: Spinach and nutmeg match in chemistry and in kitchens. They rank in the top 4% of all ingredient pairs, and cooks put them together in 603 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Pick, wash, and boil enough spinach to measure 1 pint when cooked.
Chop and pound the spinach into a soft paste.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Spinach
- Provides the main green flavour and bulk, giving the soup its body and colour.
- Butter
- Adds richness and a smooth, silky mouthfeel to the soup.
- Strong stock
- Forms the liquid base that carries the flavour of the soup.
The step that matters
Return to heat and when near boiling, mix in the butter and sugar. Adding butter and sugar near boiling rather than at a full rolling boil helps the fat emulsify smoothly and keeps the sugar and dairy-free flavour balanced, avoiding a greasy or separated texture.
