What each ingredient does

Horseradish
Adds sharp, pungent heat that cuts through the richness of the oysters.
Tomato ketchup
Contributes sweetness and body, rounding out the sauce's sharpness.
Lemon juice
Provides acidity that brightens the sauce and balances the sweetness of the ketchup.
Oysters
Main ingredient, served raw so their briny, delicate flavor is the centerpiece.
