Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the hot syrup and add richness to the custard-like base.
Heavy cream
Whipped to add air and a light, creamy texture to the parfait.
Sugar
Caramelized to give the parfait its deep, toasty caramel flavor.

The step that matters

Cook the mixture until slightly thickened. Egg yolks thicken when heated gently, but overheating can scramble them into lumps. Stop once the mixture coats a spoon and chill it promptly to keep it smooth.

Swap the almond

How well each one fits the dish's main ingredients (sugar, egg, cream):

  1. Almondthe original
  2. Pistachiofits about as well
  3. Chestnutfits less well
  4. Pecansfits less well

Fit is the average pairing score against sugar, egg, cream. Candidates are from the same food group and used in at least 100 recipes.
