Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beans
Provide the main body and starch that give the dish its substance and texture.
Salt pork
Adds fat and savory flavour that moves into the beans during slow baking.
Molasses
Adds sweetness, dark colour and a deep flavour during the long bake.
Sugar
Adds sweetness and helps the sauce brown and thicken as it cooks.

The step that matters

Uncover for the last hour. Keeping the pot covered the whole time leaves the sauce thin. Uncovering lets surplus liquid evaporate so the sauce thickens and the surface can brown.

Swap the beans

How well each one fits the dish's main ingredients (pork, molasses, sugar):

  1. Beansthe original
  2. Chestnutfits about as well
  3. Peanutfits about as well
  4. Sesamefits about as well

Fit is the average pairing score against pork, molasses, sugar. Candidates are from the same food group and used in at least 100 recipes.
