  1. Butter your mold.

  2. Layer the veal and ham in the mold, seasoning with cayenne, salt, mace, parsley, shallot, and hard-boiled egg slices.

  3. Press down the layers and bake.

  4. Make veal gravy by straining a mixture with Isinglass and adding catsup.

  5. Pour the gravy over the cake while hot.

  6. Let it cool, then turn it out.
