Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the bulk of the body and the sweet, acidic base of the sauce.
Vinegar
Adds acidity that sharpens flavour and helps preserve the sauce.
Garlic
Contributes pungent aroma that mellows during the long simmer.
Cayenne pepper
Adds heat that builds as the sauce reduces.

The step that matters

Boil until reduced by half. Long boiling evaporates water and concentrates the tomato solids, which thickens the ketchup and deepens its flavour. Stopping too early leaves it thin and watery, so check the volume rather than relying only on the time.

Swap the tomato

How well each one fits the dish's main ingredients (vinegar, clove, allspice, pepper, garlic):

  1. Mustardfits better
  2. Capsicumfits better
  3. Shallotfits better
  4. Tomatothe original

Fit is the average pairing score against vinegar, clove, allspice, pepper, garlic. Candidates are from the same food group and used in at least 100 recipes.
