Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Forms the bulk of the fritter and gives it a soft, tender body once boiled.
Eggs
Bind the mixture together and help set the fritters as they cook.
Currants
Add pockets of sweetness and chewy texture throughout the fritters.
Flour
Thickens the batter so the spoonfuls hold their shape in the hot fat.
Lard
Conducts heat for frying and browns the outside of the fritters.

The step that matters

Drain the rice completely before mixing. Excess water in the cooked rice dilutes the batter and makes the fritters soggy and slow to set. Thorough draining lets the flour and eggs thicken the mixture properly so it holds its shape in the hot fat.

Swap the currant

Fit is the average pairing score against rice, egg, lemon, nutmeg, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
