Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Prime beef
Provides the meat that becomes tender through slow stewing and is browned at the end.
Butter
Adds fat to the pot, helping the meat brown and enriching the gravy.
Flour
Coats the meat and thickens the gravy as it cooks.
Black pepper
Adds sharp aroma and mild heat to the seasoned beef.

The step that matters

Return the meat to the pot to brown, turning often to prevent burning.. The flour coating and butter can scorch before the surface browns if the heat is too high or the meat is left still. Frequent turning lets the surface brown evenly and keeps the flour from burning, which would make the gravy taste bitter.
