What each ingredient does

Cherries
Provide the fruit base, whose juice is drawn out and mixed with the sugar.
Apple vinegar
Adds acidity that gives the cherries a sharp, tart flavor.
Sugar
Adds sweetness and draws liquid out of the cherries to form a syrup.

The step that matters

Stirring the cherries and sugar until the sugar fully dissolves. Sugar pulls water out of the fruit through osmosis. If the sugar is not fully dissolved and stirred in, parts of the fruit stay dry while others sit in concentrated syrup, so the batch can ferment or spoil unevenly.

Swap the apple

How well each one fits the dish's main ingredients (vinegar, sugar):

  1. Vanillafits better
  2. Strawberryfits better
  3. Pineapplefits about as well
  4. Applethe original

Fit is the average pairing score against vinegar, sugar. Candidates are from the same food group and used in at least 100 recipes.
