Green Pepper Mangoes

Ingredients

Directions

  1. Slit the peppers between the veins and remove the seeds, leaving the stems on.

  2. Prepare a strong brine of cold salt water that can float a fresh egg and pour it over the seeded peppers.

  3. For three days, pour fresh brine over the peppers and discard the old brine, ensuring to drain the peppers well.

  4. In a bowl, mix the chopped cabbage, grated horseradish, mustard seed, celery seed, black pepper, salt, and brown sugar.

  5. Layer the mixture in jars, sprinkling a little brown sugar, crushed ginger, cloves, mace, onions, and horseradish between layers.

  6. Fill the jars with vinegar and seal them tightly.

  7. Stuff the peppers with the mixture and sew up the slit using a large needle and small twine.
