What each ingredient does

Beef
Forms the main body of the dish, becoming tender and sliceable after long cooking.
Brine
Seasons the meat and helps preserve it during the long curing period.
Grated bread
Absorbs butter and seasonings, keeping the stuffing moist inside the meat.
Butter
Adds fat that enriches the stuffing and keeps it moist during cooking.
Coarse sea salt
Seasons the meat and aids in curing the beef.

The step that matters

Boil in water steadily for eight to nine hours. A steady, gentle simmer breaks down connective tissue slowly, making the meat tender. Boiling too hard can toughen the outer layers and cause the meat to fall apart unevenly.

Swap the mace

How well each one fits the dish's main ingredients (beef, bread, butter, pepper, clove, celery):

  1. Parsleyfits better
  2. Thymefits better
  3. Nutmegfits better
  4. Macethe original

Fit is the average pairing score against beef, bread, butter, pepper, clove, celery. Candidates are from the same food group and used in at least 100 recipes.
