Ingredients

Directions

The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Dress the chicken as for broiling, wash, and drain well.

  2. Lightly salt the chicken, dust with black pepper, and dredge with flour.

  3. Dredge the bottom of a baking pan thickly with flour.

Assemble

  1. Place the chicken breast down.

  2. Cover the chicken with thin slices of bacon. Add lumps of butter on top. Dredge flour lightly over everything.

  3. Add cold water until it stands half an inch deep in the pan.

  4. Cover with another pan that fits exactly.

Bake and brown

  1. Place in a hot oven (400°F / 200°C).

  2. Cook for 30 minutes, covered, adding more water if needed.

  3. Remove the top pan.

  4. Brown the chicken until the bacon is crisp and the flour is browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Forms the main body of the dish, cooking gently in its own steam and juices.
Flour
Coats the chicken and pan, then browns to add color and a toasted flavor.
Bacon
Renders fat over the chicken and crisps, adding savory flavor and browning.
Butter
Adds fat and richness, helping the surface brown and carrying flavor.

The step that matters

Cover with the top pan and cook covered. The covered pan traps steam so the chicken cooks through gently and stays moist. Adding water as needed keeps the bottom from scorching before the final browning uncovered.
