Baked Hash

Why it works: Potato and onion are a kitchen classic. They rank in the top 3% of all ingredient pairs, and cooks put them together in 9,023 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. In a pot, combine cold beef, sliced potatoes, minced onion, pepper, and coarse sea salt.

  2. Moisten the mixture with a little hot water and stir until heated through.

Bake

  1. Transfer the mixture to a deep buttered dish and mold it into a nice shape, smoothing the top.

  2. Bake in a 400°F (200°C) oven until the top is brown and a thin crust forms.

What each ingredient does

Cold beef
Provides the main protein and bulk of the hash.
Boiled potatoes
Add starch and body, helping the hash hold together as it bakes.
Butter
Greases the dish and adds richness to the browned surface.

The step that matters

Baking until the top browns and a thin crust forms. Dry heat from the oven browns the surface through the Maillard reaction, creating flavor and a crisp crust. Pulling it too early leaves the top pale and soft, while baking too long can dry the interior.

Swap the onion

How well each one fits the dish's main ingredients (beef, potato, pepper, butter):

  1. Onionthe original
  2. Capsicumfits about as well
  3. Tomatofits about as well
  4. Chivefits about as well

Fit is the average pairing score against beef, potato, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
