Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

French chestnuts
Provide the main bulk and a soft, starchy texture once cooked and riced.
Butter
Adds richness and moisture, carrying flavor through the stuffing.
Cracker crumbs
Absorb liquid and fat, giving the stuffing body and structure.
Cream
Adds moisture and softness, keeping the chestnut mixture smooth and spreadable.

The step that matters

Forcing the chestnuts through a potato ricer. Cooking until fully tender and then ricing produces a smooth, lump-free purée. Under-cooked chestnuts stay firm and grainy, so the stuffing turns out gritty rather than soft.
