What each ingredient does

Veal
Forms the main body of the loaf and gives it its meaty structure.
Eggs
Bind the mixture so the loaf holds its shape when sliced.
Rolled crackers
Form a crisp, golden crust on the outside of the loaf.
Butter
Adds richness and moisture, helping the loaf stay juicy as it bakes.

The step that matters

Mould the mixture into a loaf shape. The mixture is soft and unbound, so it must be firmly shaped and evenly packed; loose packing can let the loaf crumble or dry unevenly in the oven.

Swap the onion
