Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Emulsify and thicken the base, giving the pudding a rich, custard-like body.
Sugar
Sweetens the base and lowers the freezing point, keeping the pudding soft rather than rock hard.
Cream
Adds fat and richness, which makes the frozen texture smooth and creamy.
Chopped fruit
Adds fruit flavour and pieces of texture; soaking in orange juice adds acidity and aroma.

The step that matters

Beat until cold and thick after adding the yolks. Beating while the mixture cools traps air and keeps the ice crystals small, so the frozen pudding stays light and smooth instead of grainy and dense.

Swap the orange

How well each one fits the dish's main ingredients (egg, sugar, cream, vanilla):

  1. Strawberryfits better
  2. Raspberryfits better
  3. Figfits better
  4. Orangethe original

Fit is the average pairing score against egg, sugar, cream, vanilla. Candidates are from the same food group and used in at least 100 recipes.
