What each ingredient does

Granulated sugar
Forms the rich syrup that sweetens the citron and, as it cooks, preserves the fruit.
Tender melons
Provide the fruit that becomes candied, taking on the sugar syrup as it cooks.

The step that matters

Cook very slowly until clear. Slow cooking lets sugar syrup penetrate the fruit gradually. Rushing with high heat can toughen the outside or leave the centre opaque and underdone.
