Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Combine chopped oysters, browned bread crumbs, minced onion, butter, raw egg yolks, hard‑boiled egg yolks, lemon juice, salt, nutmeg, black pepper, and cayenne pepper in a pan.

  2. Heat the mixture thoroughly on the stove.

Fill and bake

  1. Fill the oyster shells with the mixture and sprinkle dry bread crumbs on top.

  2. Bake in a preheated oven at 400 °F (200 °C) for 15 to 20 minutes just before serving.

What each ingredient does

Oysters
Provide the main flavor and the savory bulk of the filling.
Browned bread crumbs
Absorb moisture and give the filling body and a toasted flavor.
Raw egg yolks
Bind the filling and add richness as they set with heat.
Hard boiled egg yolks
Add richness and a crumbly texture that helps thicken the filling.
Butter
Adds fat for richness and helps the top brown in the oven.

The step that matters

Heating the filling thoroughly. Raw oysters and raw egg yolks must be heated fully so the oysters cook through and the egg yolks set and bind the mixture safely.
