What each ingredient does

Oysters
Provide the main flavor and form the body of the stuffed shells.
Bread crumbs
Absorb moisture and bind the filling so it holds together when baked.
Egg yolks
Add richness and help bind the filling as the egg sets during baking.
Butter
Adds fat for richness and helps the topping brown lightly in the oven.
Lemon juice
Adds acidity that brightens the rich oyster and egg flavors.

The step that matters

Chop the oysters finely. Fine, even pieces mix evenly through the bread crumbs and egg yolks, so the filling binds and cooks uniformly instead of leaving large raw pockets of oyster.
