To Bake Fish

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. Rub the fish inside and out with coarse sea salt, black pepper, and a small amount of cayenne pepper.

  3. Prepare a stuffing by mixing bread crumbs with pepper, salt, and thyme or parsley.

  4. Stuff the fish and sew or tie it closed with string.

Bake

  1. Place the fish in a pan and add 1 pint of water.

  2. Sprinkle the fish with flour and add some butter on top.

  3. Bake slowly for one and a half hours, basting well.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whole fish
Forms the main body of the dish, cooking gently in the oven to become tender and flaky.
Bread crumbs
Absorb moisture and juices from the fish, giving the stuffing a soft, binding texture.
Butter
Adds fat that enriches the surface and helps it brown and taste rich as it bakes.
Flour
Coats the surface, helping to thicken the pan juices and encourage light browning.

The step that matters

Bake slowly and baste well. Low, slow heat cooks the fish gently so it stays moist, while regular basting returns pan liquid to the surface and prevents it from drying out.

Swap the thyme

How well each one fits the dish's main ingredients (fish, pepper, bread, flour, butter):

  1. Parsleyfits better
  2. Capersfits better
  3. Nutmegfits about as well
  4. Thymethe original

Fit is the average pairing score against fish, pepper, bread, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
