Stuffed Cabbage

Ingredients

Directions

Prepare the cabbage

  1. Boil the cabbage in clear salted water until thoroughly cooked, tying a string around it to keep the leaves intact.

  2. Once cooked, place the cabbage on a flat dish, turn back four or five outer leaves, and cut out the heart.

Make the filling

  1. Chop the heart of the cabbage very fine and mix it with the chopped cold meat, hard boiled eggs, celery seed, celery, butter, salt, and pepper.

Stuff and serve

  1. Place the mixture in the center of the cabbage where the heart was cut out, folding the leaves back over it to resemble a whole head of cabbage.

  2. Pour the drawn butter and milk over the cabbage and let it simmer on a steamer until ready to serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White cabbage
Forms the edible outer shell that holds and encloses the filling.
Cold meat
Provides the savoury, meaty body of the filling.
Hard boiled eggs
Add richness and a soft, binding texture to the chopped filling.
Celery
Adds crisp texture and a fresh, aromatic flavour to the filling.
Drawn butter and milk
Adds fat and moisture that keep the cabbage and filling from drying out.

The step that matters

Simmering on the steamer. Cabbage cooked too long turns soft and watery and loses its shape, while the filling needs enough gentle heat to warm through. Keeping the heat gentle and the cabbage intact helps it hold together when served.

Swap the cabbage

How well each one fits the dish's main ingredients (meat, egg, celery, butter, pepper, milk):

  1. Potatofits better
  2. Capsicumfits better
  3. Asparagusfits better
  4. Cabbagethe original

Fit is the average pairing score against meat, egg, celery, butter, pepper, milk. Candidates are from the same food group and used in at least 100 recipes.
