Why it works: Grapefruit and black currant share more aroma than cooks usually use. They rank in the top 13% of all ingredient pairs, and cooks put them together in 2 recipes. Both carry 1-octen-3-one, which smells mushroom-like. The science ↓

6 grapefruit halvesIngredients
Directions
Prepare the grapefruit
Cut each grapefruit in half and remove all hard pith and thick skin with scissors.
Use a silver fork to flake the fruit pulp into small pieces.
Sprinkle the pulp generously with powdered sugar and chill on ice.

What each ingredient does
- Grapefruit
- Provides the main fruit pulp, tartness and bulk of the cocktail.
- Maraschino cordial
- Adds sweetness and a distinct cherry-almond aroma to the fruit.
- Black currant jelly or red currant jelly
- Adds sweetness, body and fruity flavor that blends into the pulp.
- Powdered sugar
- Sweetens the pulp and draws out some juice as it sits chilled.
The step that matters
Remove all hard pith and thick skin. Pith is bitter and tough, so leftover pieces spoil the mouthfeel and taste. Cutting cleanly along the membranes keeps the flesh sweet and pleasant to eat.
