What each ingredient does

Blackberries
Provide the juice, flavor and natural sugars that the wine is made from.
Sugar
Feeds the yeast during fermentation, producing alcohol and carbon dioxide.

The step that matters

Skim the surface twice a day until fermentation ceases. Fruit pulp and the surface can grow mold or spoilage microbes if left exposed to air. Regular skimming removes debris and helps keep the fermenting liquid clean until active fermentation stops.
