Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal or beef
Provides the main body of the gravy and browns to build savory flavor.
Garlic
Adds pungent aroma that mellows and sweetens during long gentle simmering.
Ham
Contributes salty, smoky meat flavor that seasons the broth as it cooks.
Broth
Forms the liquid base that carries flavor and gives the gravy its volume.
Flour (in the method)
Dredged onto the meat to brown and thicken the gravy slightly.

The step that matters

Brown the meat well. Browning creates deep flavor through the Maillard reaction. Pale meat yields a flat gravy, so the meat should be turned until it is well browned, not just gently warmed.

Swap the garlic

How well each one fits the dish's main ingredients (veal, pepper, carrot, clove, ham, lemon):

  1. Marjoramfits better
  2. Parsleyfits better
  3. Thymefits better
  4. Garlicthe original

Fit is the average pairing score against veal, pepper, carrot, clove, ham, lemon. Candidates are from the same food group and used in at least 100 recipes.
