Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Line an ungreased cake pan with parchment paper.

Make the batter

  1. Sift together the flour, cream of tartar, and sugar ten times.

  2. In a large mixing bowl, beat the egg whites to stiff peaks using a wire whisk.

  3. Gently fold in the vanilla and the sifted flour mixture until just combined.

Bake

  1. Pour the batter into the prepared pan and bake for 40 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to stiff peaks, they trap air and give the cake its light, airy structure.
Cream of tartar
Stabilizes the whipped egg whites, helping them hold their peaks longer.
Granulated sugar
Sweetens the cake and helps stabilize the whipped egg white foam.
All-purpose flour
Provides the light structure that sets the cake's crumb once baked.

The step that matters

Folding in the flour mixture. Overmixing knocks air out of the whipped egg whites, which makes the cake dense. Fold gently, only until combined, so the foam keeps its volume.

Swap the vanilla

How well each one fits the dish's main ingredients (flour, cream, egg, sugar):

  1. Raisinfits about as well
  2. Vanillathe original
  3. Figfits less well
  4. Strawberryfits less well

Fit is the average pairing score against flour, cream, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
