Neck of Mutton

Ingredients

Directions

Prepare the mutton

  1. Trim the neck of mutton neatly and blanch it in cold water.

  2. When it boils, remove it and wash in two or three waters.

Stew

  1. Line the bottom of a stew pan with sheets of fat bacon and add a little stock to wet it.

  2. Cut the mutton into the stew pan, cover with bacon and white paper.

  3. Add 1 pint of second stock and simmer on a very slow stove for about 1.5 hours.

Glaze and serve

  1. Once done, place it in the oven to dry and glaze it.

  2. Before serving, glaze it again.

  3. Serve the puree of potatoes on the dish first, then place the mutton on top, garnished with carrot.

What each ingredient does

Mutton neck
Provides the main meat, which becomes tender through long, slow simmering.
Fat bacon
Lines the pan and covers the meat, adding fat and savoury flavour during the slow cook.
Second stock
Provides the cooking liquid that gently braises the meat and builds a savoury sauce.
Butter
Adds richness and fat to the finished dish.

The step that matters

Slow simmering on a very slow stove. Holding the stew at a gentle simmer lets the connective tissue in the neck break down slowly, so the meat becomes tender. A fast boil toughens the meat and can dry out the surface.

Swap the carrot
