Escaloped Oysters

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the oysters

  1. Blanch the oysters and remove the gills.

  2. Strain the oyster liquor.

  3. Melt the butter in a stew-pan.

Fill the shells

  1. Pour some melted butter into each scallop shell and spread it with a brush.

  2. Place the oysters in the shells, adding a little pepper and salt.

  3. Pour the oyster liquor over the oysters.

  4. Cover the oysters well with bread crumbs.

  5. Drizzle a little oiled butter over the crumbs.

Bake

  1. Bake in a 400°F (200°C) oven until browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Form the main body of the dish and release savory liquor as they cook.
Butter
Adds richness and helps the crumbs brown in the oven.
Bread crumbs
Form a crisp, golden topping that protects the oysters from drying out.

The step that matters

Cover the oysters well with bread crumbs. Full coverage shields the oysters from direct heat so they cook gently and stay moist, while the crumbs toast to a golden crust. Gaps leave exposed oysters that can dry out or toughen.
