A Roulard of Pork, Roasted

Ingredients

Directions

  1. Remove the neck from the pork breast and take out all the bones.

  2. Beat the breast with a flat surface to help it keep its shape.

  3. Mix chopped sage and onion in equal amounts, then add to the pork.

  4. Season with pepper and coarse sea salt, then roll it up tightly.

  5. Sew the rolled pork with twine using a packing needle.

  6. Place it on a spit and score the rind after a few minutes of roasting.

  7. Serve with gravy poured over the dish.
