Rump of Veal a LA Daube

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Season the rump of veal with coarse sea salt and pepper.

  2. In a large pot, sauté chopped onions, carrots, and celery until soft.

  3. Add the seasoned veal to the pot and brown on all sides.

  4. Pour in enough water or broth to cover the meat.

  5. Add bay leaves and thyme, then bring to a boil.

  6. Reduce heat, cover, and simmer for 2-3 hours until tender.
